Cranberry Cream Cheese Bites


Cranberry Cream Cheese Bites

1/4 cup sugar
1/4 cup water
1 1/4 cups Ocean Spray® Fresh or Frozen Cranberries
1 teaspoon lemon juice
1/2 teaspoon finely shredded lemon peel
25 3 1/4-inch square wonton wrappers
pkg of cream cheese, cut into 24 3/4-inch cubes
Preheat oven to 350°F. Spray 24 miniature-muffin cups with non-stick cooking spray.

Combine sugar and water in a medium saucepan; bring to a boil. Add cranberries; return to a boil. Reduce heat; simmer about 3 to 4 minutes or until cranberries pop and mixture thickens slightly, stirring occasionally. Remove from heat; stir in lemon juice and peel.

Press 1 wonton wrapper gently into each muffin cup, allowing ends to extend above. Spray edges of wonton wrappers with non-stick cooking spray. Bake for 12 to 14 minutes or until bottoms of cups are beginning to brown.

Place 1 cube of cream cheese in each cup; place sheet of aluminium foil over each pan to prevent excessive browning. Bake 3 to 5 minutes or until cheese is soft. Remove from oven; top each with about 1 teaspoon cranberry mixture.

Valentine's Day

Over the next few Days I will be adding my Valentine's day feast!  It is the first time Matthew and I have used our new China.  We got some beautiful Royal Dalton for Christmas from Matthew's Family!!

Baby Frustrations

I must say that the baby thing is just starting to get old for me.  My husband and I have resigned ourselves to the fact that we will not be able to conceive a child of our own.  We have seen fertility specialists, have gone through the whole IVF thing without success.  We are more than happy to adopt a child and know we can love that child no matter what.

What I am tired of is how rude people can be.  I am sick of people telling me all the things I should do to get pregnant  because that is what they did (even though it may come from a place of kindness).  I am tired of people telling me how lucky they feel that they could get pregnant so easily and do not have to go through what I must be going through.  I am tired of people telling me I am too old to even think of conceiving (gosh I am 40 now don't ya know).

But I think the kicker was a conversation I had today and was given the following sage advice:  "Well you may want to adopt but you better understand that at your age they will never give you a baby and maybe not even a child at all."  Wow that sure was nice to hear wasn't it!  The best part is the conversation came up because this person began with why haven't you and your husband started the adoption process yet.

Enough ranting - sometimes I just feel better when I throw it out there and then can see how ridiculous the whole thing is.

Good Night Camping :(

Sorry I have been away for so long!  August found me camping nearly every weekend!  This spring my hubby and I purchased and 1982 (yes that is correct 1982) bonair tent trailer from my cousins.  It may be old but is sure has given us tons of pleasure this Summer.

So I am sad today as my husband parked the trailer in the garage.  I guess this means our camping season is truly done.

 So I guess I need to go back to dish cloth knitting to fill my time up.
